  • Shake, clean & refill syrup pumps if required.

  • Refill shakers if required.

  • Put milk bottle & jug on counter at collection.

Sanremo Cafe Racer

  • Backflush groupheads with portafilters in to ensure no chemical present

  • Clean Microfibres at steam wands

  • Top up Malkonig E80 grinder hopper

  • Dump first couple of grinds

  • Dial in (18g dose / 30 seconds / 36g yield)

Set Up Display

  • Put daily par levels quantity of items on display

  • Write what's available using white marker on glass

Sandwich Prep

  • Ensure prep area is sanitised & clean

  • Prepare sandwiches according to daily par level referring to sandwich manual

  • Date label & cover ingredients used in drawers

  • Store sandwiches for day in gn boxes in drawers ready to toast.
