LARGE BEEF PATTY

  • Properly handwashes, sanitizes hands, puts on a new pair of single use-vinyl gloves

  • Moves smallwares and scraps the grill surface to prepare space for large beef patties.

  • places single use poly gloves on both hands

  • Opens the reach-in cooler door using a poly glove to touch the door handle

  • Grabs the required amount of beef patties using poly gloves

  • Closes reach-in door using elbow or poly glove to touch handle

  • Places beef patties on grill from back to front

  • If necessary, uses the poly gloves to re-open the cooler door and store extra patties

  • Removes the poly gloves before handling seasoning, spatulas, timers ,grill scrappers, bun oil/water bottles, warming drawers, and ready-to-eat foods. Adheres to proper glove removal procedures leaving the vinyl gloves in place

  • 1. without touching the vinyl glove, grasps the poly gloves from back of wrist.

  • 2. Pulls the glove away from their body , turning it inside out.

  • When pre alarm sounds, turns the beef patties away from the transfer zone.

  • When alarm sounds, quickly flips the meat twice, once to sear off potential juices and again onto the transfer zone

  • press the transfer zone timer.

GRILLED ONIONS

  • Properly handwashes, sanitizes hands, pits on a new pair of single use-vinyl gloves

  • Moves smallwares and scraps the grill surface to prepare space for grilled onion

  • Places single use poly gloves on either right or left hand

  • Opens the reach-in cooler door using a poly glove to touch the door handle

  • Uses hand with vinyl glove to grab the required amount of diced onions

  • Closes the reach in door using an elbow or poly glove to touch the door handle

  • Places the onions on the designated spot on the grill using the vinyl glove

  • Removes the poly glove before handling seasoning, spatulas, timers, grill scrappers, bun oil/ water bottles, warming drawers, and ready to eat foods. Adheres to proper glove removal procedures leaving the vinyl gloves in place.

  • 1. Grasps the poly gloves from back of wrist.

  • 2. Pulls the glove away from their body, turning it inside out, then discards.

  • Sprays one shot of bun oil onto the onions.

  • Presses the large patty timer ( 2:45)

  • Uses the spatula to stir the onions at least 3 times during cooking.

  • When the alarm sounds, removes onions to the product being assembled or to doubled 4" deep sixth size pan on the grill for staging (up to ten minutes)
