Knives are tracked by the color of the handle, as well as the size of the knife. Circle the size of the knife. Iron Will Raw uses only 2 sizes of knives, small and large. All knives are to be signed out when taken by the person removing the knife from the block, and when the knife is returned to be cleaned the knife is to be signed back in by the person returning the knife. The same is to be done with scissors, blades in grinder and grinder blade in mixer.
