Behind The Counter

  • Clean blenders with soapy water put through dishwasher

  • Clean sandwich press

  • Remove chopping board, knife and sandwich slicer and put through dishwasher. Make sure to return after washing

  • Wipe down the bench

  • Remove cakes from cabinet, clean boards and restock for the morning, wrap with clingwrap and put in white fridge

  • Ensure fruit fly traps are placed inside the cabinets overnight

  • Wipe the cake cabinet out, make sure all crumbs are removed, wipe down the doors . (no fingermarks)

Acai Machine - Last Acai 3.30pm

  • Refill the acai machine, refill all the toppings and then switch the

  • Acai set to defrost mode

  • Wash the chopping board, spoons and knife. Make sure to return after washing

  • Put strawberries, blueberries and banana into the fridge

  • Clean bench

  • Clean black tiles

Juicer Machine - Last Juice 3.30pm

  • Clean juicer thoroughly and put through dishwasher

  • Put chopping board and knife through dishwasher and then return

  • Clean bench and black tiles

Coffee Machine - Last Coffee 4pm

  • All groups and handles – back flushed, handles and filters soaked in the chemical powder

  • Milk steamer – scrape off the milk and soak the steamer overnight in a glass with wate

  • Empty both coffee grinders and brush the hopers from inside

  • PUQ Press – press the cleaning button, brush the temper, if needed unscrew the temper and clean it from inside

  • Milk fridge – wipe the shelves and doors from inside/outside

  • Wipe down properly all benches, all around the coffee machine, grinders and the area for take away coffees. Make sure to clean the bench under to coffee machine and flavoured syrups

  • Glasses and spoons – use the detergent and sponge before you put them in the dishwasher. Polish the latte glasses and spoons to remove any water marks.

  • Empty all bins – including the little one for customers

  • Milk in the fridge – Full cream / Skim – bring crates from the cool room, soy / almond – use boxes stored under the coffee machine

  • Chocolate syrup – always 1 bottle in the fridge ready for the next day

  • Chocolate powder – top up the shaker

  • Sugar, equals, straws, stirrers

  • Coffee cups and lids + cups and lids for iced coffee and juices – also make sure there is enough of each lids and cups in the cupboard, if not, bring more from the store room

  • Coffee trays

  • Tea – if needed

Front Of House Area

  • Wipe down all tables and chairs

  • Bring in all furniture from outside and signs

  • Chain and Padlock the tall tables and tall chairs

  • Put umbrella down

  • Sweep floor

Fridges And Hot Food Cabinets

  • On the wastage form mark down all the food from the fridges (with the exception of certain items. Refer to the wastage guide)

  • Items that we do holdover, mark the bottom of these. If they already have a mark these will now be wasted

  • Make sure to remove the dressings from the salads so we can reuse

  • Remove all items from the fridges, put in a milk crate and put into the coolroom for oz harvest

  • Wipe down the fridges, including the mirrors. (no fingermarks or smudges)

  • Turn the light off on all fridges. Fridge 1 and 2 ( drinks fridge and rice pudding fridge) the power stays on. Fridge 3 and 4 get switched off completely. Pull down covers on all fridges

  • Hot food bar gets switched off

  • Pumpkin, tomato and vegetable soups to be put in containers, labelled and put into the cool room, all other food is to be added onto the wastage form and then thrown out

  • Spray and wipe hot food bar

Final Closing Duties

  • Empty all rubbish bags and take outside, replace with new bags

  • Make sure dishwasher is empty, drained and turned off

  • Make sure sandwich press, blenders and juicer is turned off at the wall

  • Turn off coolroom light

  • Turn off music and air con

  • Clock out and lock up
