Coffee Machine Set Up Guide

  • Fill both hoppers with coffee beans (small grinder with decaf)

  • Run 1-2 shots through each group handle, use these shots to test the coffee grind. Shots should weigh from 21.5g - 22.5g in 27-31 seconds. Please adjust if needed

  • Set up your milk station, 1 bottle of full, 1 skim,soy and almond on the bench ready to go. Oat and lactose free on hand in the fridge. Cut extra bottles of soy and leave in the fridge

  • A clean "green microfiber" cloth for the steam wand and one for the bench

  • Choc sauce bottle out of the fridge, choc powder shaker full, sugar and honey topped up

  • Spoon container for stirring drinks filled with water

  • Check milk fridge, clean rotate and refill

  • Set up tables outside, ensure all tables are neat and tidy

  • Milk crates and bread crates to be stacked neatly, trolleys outside

  • All A frame signs out and acai sign

  • Lights on, air curtain on and doors open for 7.30am

  • Turn music on from Ipad

Acai Machine

  • Strawberries cut

  • Blueberries and banana out

  • All toppings full with spoons

  • Chopping board with knife, acai containers and lids ready to go

  • Ensure 2 x clean "red microfiber" cloths are available for front of house

Juicer Fridge

  • Apples

  • Bananas

  • Oranges

  • Celery

  • Kale

  • Cucumber

  • Ginger

  • Mixed berries

  • Pineapple

  • Watermelon

  • Lemons

  • Ensure all containers are labelled and dated

  • Chopping board and knife

  • Cut baking paper for grillers ( check for serrated knife, board and sandwich slicer)

  • Prepare the ham and cheese croissants ( 1 slice ham 1 slice swiss cheese)

  • Glass cleaner the cake cabinet and doors ( no fingermarks) and POS screens

In Front Of Counter

  • Restock all snacks and bananas

  • Restock cutlery, napkins, sugars and salt

  • Wipe alll tables and chairs (check sugars on tables)

Fridge And Hot Cabinet

  • Make sure all labels are straight, set soup labels in place for soups to go straight in

  • In between serving customers top up fruit prep, wash dishes, fill milk fridge, restock cakes and prepare miso soup for the kitchen

  • Clean all mirrors on display fridges, wipe all shelves so they are crumb free
