  • Please wait until dinner rush has slowed down to begin this checklist. Typically a good start time is 7:30-8:00 PM. Remember that the guest always takes priority, do not let these tasks detract from the guest experience.

  • Wipe down POS equipment

  • Wipe down steel doors & kitchen door w/ Stainless Steel cleaner

  • Empty drive-thru trash & place in back

  • Sweep under all fridges and ice bins as well as entire Front Counter

  • Take drive thru tea runs back to be cleaned when empty

  • Empty iced coffee into small container, take urn back to be cleaned

  • Wet scrub or magic erase under fridges, ice bins, and corners

  • Place right side of ice dream on wash

  • Take ice cream collectors back to be washed

  • Break down lemonade

  • Stock up

  • Empty right side of ice dream

  • Take small ice dream dishes back

  • Clean coffee machine

  • Fill up the three ice dream 12qts

  • 10qt warm water, 10qt sanitizing water, and 10qt warm water

  • Place shake base boxes in fridge and turn off unit

  • Prepare soapy water in right side of prep sink

  • Run as many cycles through the right side of ice dream as possible

  • Wipe all counters

  • Wipe hand sinks

  • Wipe ice machine

  • Wipe down chutes

  • Right two soda towers

  • Save the following tasks for after the restaurant closes at 10PM.

  • Bring back cherries, lemons, tongs, scoops, fry collector

  • Other front counter trash can

  • Left side ice dream all cycles

  • Clean all ice dream dishes

  • Clean outside of Icedream machine and milkshake spindles

  • Hang headsets, charge batteries

  • Last two soda towers

  • Rinse prep sink, 12qts, 22qt standing tea urns

  • Red towel bucket, empty and put towels in hamper

  • Wipe down trays

  • Bring up dishes

  • Scrub n go FC. Empty, spray out, leave open in cage PLUGGED IN

  • Spray out all dustpans
