  • Is the front counter neat, orderly, free of cleaning supplies and obstructions?

  • There is no cleaning supplies left in view of the guest in the lobby?

  • Is the men's restroom clean, stocked, urinal cakes are present (odor free), trash cans don't need paint & the restaurant does have keys to the toilet paper dispensers?

  • Is the women's restroom clean, stocked & trash cans do not need paint ?

The Path (BOH)

  • Is the floor properly maintained and not greasy?

  • Is the new toaster & butter wheel properly cleaned and maintained?

  • Is the front, back, sides & shelves of the entire grill sparkling clean and the flu is not obstructed?

  • Does the fryer shortening meet quality requirements, the fryer is consistently boiled out & is sparkling clean on all sides?

  • Is the BOH and walk-ins clean, neat, organized and reflects that the maintenance task planner is being properly utilized?

  • There is no food, food packing products on the floor?

  • Is the training room clean, certification tracking chart is posted, certifications are accessible, job aids & training paths are posted?

  • Does the fryer timer beep/sound off after the 7 minute hold time has expired?

  • Does the restaurant have a salt shaker and is it in use? 6 shakes

  • Are all protein holding cabinet timers programmed correctly and working?

  • Has the restaurant received training materials, new boxes, spatulas & bottles?

Business Practices & Systems

  • Is the positioning chart current and in use?

  • Is the work station daily planners current and in use?

  • Is the build to charts posted, current and in use? Check PHU to verify.

  • Is the prep list current, completely filled out and in use?

  • Is the FSC current, in use and completed properly for the last five days?

  • Is the team & management all in proper uniform and 3 headsets are in use?

  • Is the team friendly and using the correct guest service steps?

  • Is all products assembled and packaged properly?

  • Is the restaurant properly staffed and no one except for the RM is scheduled more than 34 hours? (During schedule writing)

  • Is the safe verification and deposit log current and in use?

  • Is the PIC communicating, respecting the floor and leading the team?

  • Does the communication board have current items posted, engagement items, notes of encouragement & current business goals posted? Is the Brand Evolution certification tracking chart posted?

  • Is the team aware of Brand Evolution and are they exited about it?
