THE RESTAURANT - SETTING THE SCENE

  • Are the opening hours and breakfast price displayed?

  • Is the host greeting guests with a warm welcome?<br>1 Breakfast Host needs to be present at all times

  • Does each place setting have main knife, side knife, fork and dessert spoon laid on a tri fold white napkin?

  • Is the non-handled milk jug placed on a white saucer in the centre of the table with teaspoon per setting

  • Are the salt and pepper pots full and clean?

HOT BUFFET

  • Are hot plates available by the buffet?

  • Are tri fold white napkins available?

  • Are appropriate buffet grade serving implements available?

  • Is there buffet signage for each item?

  • Are there sauce bottles/caddys and are they clean and filled up adequately?<br>A range of different sauces must be provided: Brown sauce, Tomato Sauce and must be provided in individual sachets or bottles

  • Is Black Pudding available, adequate quantity, hot, not too much oil?

  • Are Back Bacon and Streaky Bacon available, cooked evenly and crisp?

  • Are classic pork sausages available and cooked evenly?

  • Are cumberland sausages available and cooked evenly?

  • Is the Chef available and interacting with the guests?

  • Is there signage visible offering items cooked on order eg poached eggs?

  • Are all items served hot?

COLD BUFFET

  • Are plates available?

  • Are appropriate buffet grade serving implements available?

  • Is cheese available and served in a chill well or glass fronted fridge?<br>A minimum of 3 (maximum 7) types of cheese must be provided and include minimum 2 hard cheeses and 1 soft cheese

  • Are there 3 meats available and served from a chill well or glass fronted fridge?<br>There should be a minimum of 3 (maximum 7) types of cold meat provided and include: cooked ham (no added water, not formed or pressed), Salami, Recommended options include turkey, smoked or cured ham and liver pate.

  • Is plain yogurt available in a big bowl for self service?

  • Are individual flavoured yogurts available?<br>There should be a minimum of 2 (maximum of 6) yogurt types provided including plain/natural, fruit, 1 type must be low fat. Yogurt should be served in a chill well or glass fronted fridge.

  • Is there Fruit of the Forest berry compote available?

  • Are red cherry tomatoes and boiled eggs available?

  • Does the presentation look fresh and appetising and has the space been used well?

FRUITS

  • Is there a minimum of 3 (maximum 5) fruit items provided including Fresh Fruit Salad, A bowl of Whole Fruits, a minimum of 1 type of cut fresh fruit. All Fruit should be served from a chill well or glass fronted fridge

  • Are fresh bananas available, stickers removed and tops cut as per spec?

  • Are fresh apples available, red/green and stickers removed?

  • Are fresh oranges available with stickers removed?

  • Is fresh fruit salad available?

  • Is fresh melon available?

  • Is fresh cut pineapple available?

  • Are there no more than 3 types of dried fruit available?

MILK / JUICES

  • Are all milk and juices served from a chill well or glass fronted fridge? <br>A minimum of 3 (maximum 5) juices must be provided and include: Pressed/squeezed orange juice (not from concentrate). One fresh fruit smoothie is permitted.<br>A minimum of 2 types of milk must be provided: Ful fat, Semi Skimmed. Soya Milk available on request

  • Are there plenty of clean 8oz Juice glasses available?

  • Is semi skimmed milk available in the dispenser?

BREADS / PASTRIES

  • Is the self service toaster clean, in full working order and is the cover over the control panel? Please test.

  • Are side plates easily available by the toaster and by the pastries?

  • Is there a minimum of 4 (maximum of 9) bread types provided and include: Sliced White, Sliced Wholemeal/Brown, Baguettes

  • Is fresh sliced white and brown bread available in baskets?

  • Is there a white baguette displayed in basket provided?

  • Is there a knife and linen napkin provided?

  • Are twin packs of ryvita available?

  • Are 3 types of pastries available and not overcooked?<br>There should be a minimum of 3 (maximum of 5) pastries provided and include Plain Croissants, Pastries.

  • Is the bread section clean and tidy?

SPREADS / PRESERVES

  • Is there a selection of jam available?<br>There should be a minimum of 7 (maximum 8) jams and spreads provided including 3 fruit jams (including strawberry and reduced sugar options), Honey, Nutella, Marmalade and Marmite. Jams must be in glass jars with serving spoons or controlled packs.
