Temperatures are to be taken and recorded at each time listed below. Always record the actual temperature that is shown on the Thermometer. All Thermometers in use must have calibration verified and recorded once per week by management. Any thermometers out of calibration must be discarded. Take the temperatures of the current products being used with a sanitised digital Thermocouple thermometer. Sanitise the thermometer between each product to prevent cross contamination. If the original temperature of the product is over 8 degrees, Throw the product away. When discarding a product, record the temperature and draw an X through the numnber, then record the product as waste. If equipment is not holding temperature, contact your area manager
