  • Is the hand wash sink stocked up with blue roll and soap and dispensers clean and in good condition ?

  • Does BOH look reasonably clean and is ' clean as you go' happening ?

How is the quality of products we make ?

  • Is the chef in control and checking all lines and batches before they are put in the fridges to be served to our customers ? Have you tasted the rice ?

  • Is the kitchen on time and running effectively ?

  • Is product availability adequate for the time of the day ?

  • Are there productivity targets, planner in place and motivation & pace coming from chef ?

  • Are all ' made to order' products portioned correctly ? Are scales and weights sheets available and used ?

  • Are line checks done and recorded ? Check the actual weight against the book record.

  • Do all products look as on the recipe card and they packed correctly, including hot food that we serve ?
