Canteen Checklist

General

  • Is the school supplier permit in place

  • The Facilities Manager is in date for PIC training

  • The catering supplier supervisor is in date for PIC training

  • Catering supplier PIC has completed FoodWatch inspections (start-up inspection, process check, equipment checks and delivery check)

  • Has the supplier uploaded the approved food list via the FoodWatch platform, is this accessible with a QR code

  • There is regular removal of waste from the canteen

  • Fly screens are fitted where appropriate

  • A pest control AMC is in place

Personal Hygiene

  • Staff wear clean uniform

  • Staff wear appropriate slip resistant footwear

  • Staff fingernails are short, unpolished, and clean (no artificial nails)

  • Hands are washed for 20 seconds using hot water and soap at appropriate intervals

  • Hand sinks are stocked with soap, disposable towels, and warm water

  • Hand washing reminder signs are posted

  • Hair nets are worn by staff and visitors

Food Preparation Areas

  • PPE is available

  • All bench areas surfaces are in a good condition

  • All equipment and utensils are clean

  • Thermometers are available and are accurate

  • Manuals are available for operating equipment and machinery

  • Safety guards have not been removed from any equipment or machinery

  • Emergency stops are tested and working

  • All hot liquid containers have lids to prevent scalds

  • The floor is free of obstructions and is slip resistant

  • There is adequate ventilation

Storage

  • Cleaning chemicals are stored separately from food items and food preparation equipment

  • Items stored on shelving are not above shoulder height where possible

  • Shelves and racks are securely fixed to the walls and floor

  • Heavy items are not stored on higher shelves

  • All food is properly wrapped, labelled, and dated

  • Food is stored at least 6 inches off the floor or in walk in cooling equipment

  • Strict rotation is being observed (FIFO)

  • Cold room doors can be opened from the inside without a key

  • Are cold rooms and freezers free from ice build up
