STRAWBERRY FILLING

  • The 1/6 size, 6" deep pan of Strawberry Filling has a slotted lid and a #60 Food Disher and is stored on the cook's line at room temperature.

  • Pan of Strawberry Filling is marked with a 48-hour discard time.

BISCUIT CRUMBLES

  • Prepping Biscuit Crumbles should be done on May 8th prior to sell date on May 9th. The preparation step for the Biscuit Crumbles should be conducted at the end of the breakfast daypart on May 8th.

  • At the end of each breakfast daypart, 3-4 biscuits are set aside for prepping the Biscuit Crumbles for the following days use.

  • If using the recommended "wire grate" method, biscuits are gently scraped using an up and down motion. Biscuit Crumbles are "fine" and not clumpy. Large clumps are being removed and discarded.

  • if using the "gloved hands" method, the biscuit is opened on the natural breakline. The biscuit is broken up until the crumbles are in "fine" pieces.

  • Biscuit Crumbles are transferred into a 1/9 or 1/6 size pan with a lid. Pan is labeled with a 48-hour discard time.

COOK LINE SET-UP

  • Icing bag has a "small" opening, not large. Opened bag of icing is placed into "upright" in a 1/6 size, 6" deep pan and placed on the cook's line next to the biscuit crumbles at room temperature.

  • An empty 1/6 size pan for "Biscuit Centers" is placed at the cook's line.

  • Strawberry Filling is placed into a 1/6 size pan with a slotted lid amd #60 Food Disher. Strawberry Filling is placed at the cook's line at room temperature.

  • Prepped Biscuit Crumbles are placed into a 1/6 or 1/9 size pan and placed at the cook's line at room temperature.

ASSEMBLY & PACKAGING

  • When observing employee behaviors while preparing new products, Strawberry Shortcake Biscuits preparation and packaging is demonstrated to standard.

SUPPORT MATERIAL

  • Job-Aids are posted on the backline for employees reference.

  • Frontline Cashier Reference Cards are posted at the registers.

  • Nutritional information has been placed near the Frontline area for employees to answer any Guest questions.

PERSON IN CHARGE

  • Person in Charge knows the Strawberry Shortcake Biscuit sales projections (ADQs).

  • Person in Charge is demonstrating MODEL-COACH-REQUIRE as needed to enforce proper standards and procedures to deliver a HOT, HIGH QUALITY Strawberry Biscuit to Every Guest, Every Time!
