Lemonade Concentrate/Strawberry & Peach Mix

  • Cartons/cases of Mix/Concentrate are removed from the walk-in freezer and labeled with a 21-day discard date.

  • Cartons of Mix/Concentrate are placed into the walk-in refrigerator above all raw products to thaw. The 12-hour thaw time is monitored using an approved timing system. BULK THAWING- Cases are thawed for 36-hours using an approved timing system.

Strawberry Lemonade and Peach Lemonade

  • A 32 oz. Measuring Cup or 2 quarts Biscuit Pitcher is used to measure 20 oz. of Lemonade Concentrate.

  • 8 oz. of Strawberry or Peach Mix is added to the same measuring cup/pitcher as the Lemonade Concentrate bringing the total to the 28 oz. mark.

  • The Strawberry or Peach Mix is poured into the 1-Gallon Plastic Jug. Water is then added to the measuring cup/biscuit pitcher to remove any remaining Lemonade/Strawberry/Peach Mix and poured into the 1-gallon Plastic Jug.

  • The 1-Gallon Plastic Jug is filled with cool tap water from the prep area sink to the 1-Gallon/128 oz. line.

  • A lid is placed onto the jug and tightly secured. Holding the lid, the jug is swirled or shaken to ensure product is thoroughly mixed together.

  • Strawberry or Peach Lemonade jugs are labeled with a 3-day discard date and placed under refrigeration.

  • Remaining cartons of Lemonade Concentrate and Strawberry/Peach Mix are closed and labeled with a 7-day discard date and placed under refrigeration.

  • One plastic jug of Strawberry Lemonade and one Peach Lemonade are being held near the frontline for easy access.

  • 1-Gallon Plastic Jugs are washed, rinsed, and sanitized every 3-days or before adding new Strawberry/Peach Lemonade mix.
