Pre Close

  • Close hopper off when you expect only 3/4 more coffees to be ordered

Too Good To Go

Clean

  • Clean fold down bar

  • Clean and polish all fridge doors with microfibre.

  • Clean and polish all counter tops.

  • Clean counter under Sanremo Cafe Racer Coffee Machine.

  • Clean outside of Sanremo Cafe Racer Coffee Machine with a damp cloth, polish with microfibre.

  • Clean outside of coffee grinder/PUC press.

  • Clean Ice Machine and surrounding area and walls.

  • Clean chocolate pump nozzle and surrounding areas.

  • Clean and sanitise utensils that are not needed for rest of service

  • Note stock needed after close.

Inventory

  • If Ice Machines water level is low, refill.

  • Restock lids on shelf

  • Refill Napkin, straws, spoons etc

  • Organise Inventory shelves.

Post Close

Bins & Waste Water

  • Empty Milk Waste Drum in Brown Food Waste Bin in Service yard

  • Empty espresso waste bin down designated grey water drain

  • Empty and sanitise bins.

  • Put Coffee Grinds into designated bin in service yard

Clean

  • Clean and sanitise all device screens.

  • Clean remaining milk jugs and utensils

  • Ensure sink is clean

Stock

  • Stock up for next mornings service

  • Alert Brand Manager if any stock is low in inventory

Espresso Bar

  • Clean Sanremo Cafe Racer Machine

  • Use Brush to remove excess Coffee Grounds In grouphead.

  • Remove baskets from Portafilter & put in blind baskets.

  • Use one small scoop of cleaning powder in each blind basket & insert into each grouphead.

  • Enter machine into cleaning mode on both groupheads (hold one shot and middle button for 3 seconds).

  • After the cycle is complete repeat with no cleaning agent in the portafilter.

  • Fully dismantle drip tray & clean & rinse & dry & polish.

  • Clean steam wands by steaming a jug of de-scaler & purging thoroughly

  • Dissemble portafilters, clean, dry and reassemble.

Malkonig E80 Grinder / Puq Press

  • Put remaining beans in Airtight container overnight

  • Clean & turn off grinder - make sure to clean rubber tab and hoover grinds out

  • Clean & turn off puq press

  • Clean counter surrounding area

Equipment

  • Dismantle & Clean & Dry Milk rinser.

Reporting

  • Any Issues with the close shift?

  • Update par levels sheet on iPad

  • All handheld devices sanitised and charging (Speaker, Square Terminal, iPad and Weighing Scales).

  • Ensure A board is in safe area where it cannot be damaged.

  • Sweep, Hoover and Mop floor.

Weather

  • Is there bad weather expected overnight? (High winds, Freezing Temperatures, High Rainfall)

  • Place A-Board Inside Truck

  • Secure Lollipop Signs to truck using Zip Ties
