Food Service Compliance

  • Contractor is expected to offer the following menu items at a minimum in Dewhurst Dining Hall. These items must be offered at each meal period including late night. This requirement applies to summer conferences as well.

    Breakfast (All Menu Offerings below must be Available from 7:30 a.m. – 11:00 a.m.)

    Breakfast on Saturday and Sunday – 7:30 a.m. to 11:00 a.m. main entrée station remains open with breakfast items.

    Breakfast on Saturday and Sunday – 7:30 a.m. to 2:30 p.m. – Omelet bar/made to order breakfast bar remains open for brunch offering omelets, French toast, pancakes, scrambled eggs or fried eggs.

    Cook your own waffles available a minimum of three (3) times per week.

    Made-to-order breakfast is available all day during the week and weekends at the grill. This includes eggs any style with hash browns, ham, bacon, or sausage. Pancakes will also be available all day at the grill.

  • Made-to-order items must be offered all day on Saturdays & Sundays. These items must be offered in addition to, not in lieu of required breakfast offerings as defined in this section.

Made-to-Order Sweet & Savory Crepe Station

  • · Daily classics: brown sugar & cinnamon, traditional lemon

  • · Rotation of two (2) savory crepes per day, such as spinach & artichoke, mushroom & Swiss cheese, seafood, ham & pineapple, chipotle chicken, hummus & red peppers, etc.

  • · Rotation of (2) sweet crepes per day, such as peanut butter & banana, raspberry & apple, tiramisu, seasonal fruit specials, etc.
