Fish Room Inspection

  • Does the fish room smell clean and not rancid?

  • Ventilations no grease or build up and walls are cleaned door handles?

  • Is the fish room organized? Fish has rotated as FIFO?

  • Knives and cutting board are clean and stored in right place? Gloves are cleaned?

  • Are the chemical items being stored away correctly? (i.e. away from any food items)

  • Cutting table is cleaned and legs and wheels are cleaned? Any rusted or builds with fish juice?

  • Are there soap and paper towels at the hand sink? Your hand sink is cleaned?

  • Hand sink has sign for employees' hand wash procedure?

  • Are the fish sinks clean? Free from Debris?

  • Are the sanitizing/soap hoses clear of the sink? As well as 3 compartment sink clean?

  • Are the small items being taken care of? (i.e. lights burnt out, holes in walls, etc.)

  • Is the fish fridge temperature between 35 and 41?

  • Your fish fridge outside free from any fish juice and door handles are cleaned?

  • Your fish fridge inside shelves, pans, and walls are cleaned?

  • Is the freezer temperature at or below 0?

Warehouse Inspection

  • If there are food items out in the warehouse area, are the properly stored 6" above the ground or are they on top of a pallet?

  • Is the shop clean and organized?

  • Is the shop floor cleaned any grease buildup or any other buildup of fluid?

  • Are the trash bins in the shop regularly taken out and not overflowing?

  • Is the building free of any damage inside of the shop area?

  • Are the items or equipment in good repair?

  • Are the water tank hoses organized in a safe and orderly manner?

  • Are the fire extinguishers up to date?

Office/Miscellaneous Inspection

  • Are the bathrooms in the building clean? (ex. floor, toilet, and hand sink)

  • Are there hand soap, paper towels, toilet paper? As well as employees' hand washing procedure with laminated?

  • Is the large trash bin outside being taken out in a timely manner and not overflowing?

  • Is the area around the trash bin clean and not littered with trash?

  • Are the used oil containers and the area around them clean?

  • Are the offices clean and free of unnecessary clutter?

  • Are the windows in the shop clean?

  • Is the inventory room clean and organized. Do the FIFO?

  • Is the inventory room set at a stable temperature?
