Sanitation

  • Are gaskets clean and not dirty with food or mold? (If dirty, document which gasket)

  • Is equipment clean and not soiled with grease, food splash (over a day old), or any other soil? (Note which equipment and the type of soil)

  • Are the walls clean and not soiled with grease, dust, mold or other soil noted on walls? (look at the back 3 compartment sink area, around fryers, and grills, and under the dump station especially)

  • Are the ice machines clean and not soiled with mold or other debris ?(look at the white sections and walls inside the machines)

  • Are the ceilings clean and not soiled with grease, dust, mold, or food splash?

  • Are the fountain stations clean? (look for mold on the soda nozzels and ice bins.

  • Are counters cleaned after being soiled?

Procedures

  • Is double hand washing occurring every 20 minutes?

  • Are all those handling ready to eat food wearing gloves? (This includes handling cherries, lime, and lemons)

  • Are the logs current and not being faked.

  • Are sanitizer buckets set up (Minimum of 5 buckets - 3 in kitchen and 2 up front)? (must be 150 to 350 ppm and 75 F to 110 F.

  • Are towels in the buckets when not in use (exception: sanitized towel can be stored on the counter if its only being used to wipe off drinks)?

  • Are tongs properly stored in holders/pans/trays? (handle must be out of food if stored with food)

  • Are all drinks in one designated location for the front of the house (cannot be stored above Sonic product/clean items)?

  • Are scoops properly used to scoop products such as ice (no scooping with the Sonic cup)?

  • Are all items in the walk in cooler, walk in freezer, and reach in coolers dated? (if not using longer than 24 hours, it doesn't have to be dated).

  • Are chemicals stored properly (must be stored in a chemical storage rack away from food. This can be a bottle rack on the wall but it cannot be over food).

  • Are food containers not used to house chemicals (includes pans, slush pumps, squeeze bottles, or other food contact surfaces)? (check at the front 3 compartment sink especially).

Pest Control

  • Is the drive-in clear of any pest activity? (Note any evidence of pest or droppings - this includes flies, roaches, rodents, etc..)
