THE RESTAURANT - SETTING THE SCENE

  • Are the opening hours displayed? (N/A in Open Lobby hotels)

  • Is the host greeting guests with a warm welcome?<br>1 Breakfast Host needs to be present at all times

  • Is the guest name being used?<br>Guests should be asked for surname instead of room number

  • Are all team members wearing name badges, and is their uniform clean and tidy?

  • Is coffee and tea being offered upon guests sitting down? -Tea being served in pots<br>There should be a minimum of 2 coffee options provided: Ground and Decaffeinated. Must be freshly ground medium roast coffee using any blend of either Arabica or Robusta beans.<br>Hot chocolate must be available on request

  • Are the selection of teas displayed in racks or baskets (A minimum of 4 maximum of 12) teas provided: Must include Black tea, Green tea, Fruit tea, Herbal tea, Decaffeinated Black Tea must be available on request)

  • Are guests tables being cleared and monitored throughout the service?

  • Are check backs being made with all guests?

  • Is a supervisor walking the floor ensuring all responsibility's are being met and speaking to guests?

TABLE SETTING

  • Is the sugar bowl clean with 10 white, 10 brown and 10 sweeteners?

  • Does each place setting have a 12oz white mug?

  • Does each place setting have main knife, side knife, fork and dessert spoon laid on a tri fold white napkin?

  • Is the non-handled milk jug placed on a white saucer in the centre of the table with teaspoon per setting

  • Are the salt and pepper pots full and clean?

  • Are pancakes available on request/IF open Lobby are pancakes being cooked from fresh in front of guests at chef’s station Is maple syrup available

HOT BUFFET

  • 1 breakfast delighter provided in Open Lobby - are Pancakes provided>

  • Are hot plates available by the buffet?

  • Are tri fold white napkins available?

  • Are appropriate buffet grade serving implements available?

  • Is there buffet signage for each item where applicable?

  • Are all Sauces provided in bottles or serving bowls on the buffet

  • Is there a minimum of 9 (maximum 12) hot items provided and MUST include: Unsmoked back rindless bacon, Premium Pork Sausages 70% min meat content, fried eggs, scrambled eggs, potato rosti or hash browns, tomatoes, mushrooms, baked beans.

  • All hot items should be displayed as the order on this sheet:

  • Are scrambled eggs moist, tasty, hot and is there adequate quantity considering volume?

  • Are fried eggs available, quantity enough for time of service, cooked to order and not over cooked?

  • Are grilled half tomatoes available, cooked evenly, not over cooked or lost its shape?

  • Are sauteed close cup mushrooms available, hot and golden in colour, not soaking in liquid?

  • Are Hash browns or potato rostis available, adequate quantity, hot and evenly brown, not overcooked?

  • Are Back Bacon and Streaky Bacon available, cooked evenly and crisp?

  • Are classic pork sausages available and cooked evenly?

  • Is the Chef available and interacting with the guests?

  • Is there signage visible offering items cooked on order eg poached eggs?

  • Are all items served hot?

COLD BUFFET

  • Are plates available?

  • Are appropriate buffet grade serving implements available?

  • Is cheese available and served in a chill well or glass fronted fridge?<br>A minimum of 3 (maximum 7) types of cheese must be provided and include minimum 2 hard cheeses and 1 soft cheese

  • Is there a minimum of 2 meats available and served from a chill well or glass fronted fridge?<br>There should be a minimum of 2 (maximum 7) types of cold meat provided and include: cooked ham (no added water, not formed or pressed) plus a non- pork product.

  • Is plain yogurt available in a big bowl for self service?

  • Are individual flavoured yogurts available?<br>There should be a minimum of 2 (maximum of 6) yogurt types provided including plain/natural, fruit, 1 type must be low fat. Yogurt should be served in a chill well or glass fronted fridge.

  • Is there Fruit of the Forest berry compote available?

  • Are red cherry tomatoes and boiled eggs available?

  • Does the presentation look fresh and appetising and has the space been used well?

FRUITS

  • Is there a minimum of 3 (maximum 5) fruit items provided including Fresh Fruit Salad, A bowl of Whole Fruits (mixed/seasonal). All Fruit should be served from a chill well or glass fronted fridge

  • Is fresh fruit salad available?

  • Are there no more than 3 types of dried fruit available?

MILK / JUICES

  • Are all milk and juices served from a chill well or glass fronted fridge? <br>A minimum of 3 (maximum 5) juices must be provided and include: Pressed/squeezed orange juice (not from concentrate). One fresh fruit smoothie is permitted.<br>A minimum of 2 types of milk must be provided: Full fat and Semi Skimmed. Non-Dairy Milk available on request, Soya milk must be available on request.

  • Are there plenty of clean 8oz Juice glasses available?

  • Is semi skimmed milk available in the dispenser?

  • Is the correct 100% pure orange juice available in the dispenser?

  • Is cranberry juice available in a jug?

  • Is tomato juice available by the bottle?

CEREALS

  • Is there a minimum of 4 (maximum of 7) cereals provided must be Kellogs, Nestle, Wheetabix or National Muesli brand - and include: Regular Cornflakes, Gluten free items available on request, Healthy/low calorie Cereal, Children's Cereal, Muesli.

  • Are cereal bowls available clean, unchipped and to the right spec?

  • Is the area clean and tidy?

  • Are all cereals in bulk dispensing units or open bowls (Open Lobby green open bowls as specified in OSE list)

BREADS / PASTRIES

  • Is the self service toaster clean, in full working order and is the cover over the control panel? Please test.

  • Are side plates easily available by the toaster and by the pastries?

  • Is there a minimum of 4 (maximum of 9) breads available & include: <br>Gluten free available on request together with facility to toast it.<br>Sliced white bread, sliced wholemeal/brown & baguettes

  • Is fresh sliced white and brown bread available in baskets?

  • Is there a white baguette displayed in basket provided?

  • Is there a knife and linen napkin provided?

  • Are twin packs of ryvita available?

  • Are 3 types of pastries available and not overcooked?<br>There should be a minimum of 3 (maximum of 5) pastries provided and include Plain Croissants (min 25g), Pastries of Bakery quality .

  • Is the bread section clean and tidy?

SPREADS / PRESERVES

  • Is there a selection of jam available?<br>There should be a minimum of 6 (maximum 8) jams and spreads provided including 2 fruit jams (including strawberry and reduced sugar options), Honey, Nutella, Marmalade and Marmite. Jams must be in single serve glass jars or in a glass jar with serving spoons.<br>Open Lobby - jams must be provided in Kilner jars.

  • Is marmalade available?

  • Is Honey available in squeezy bottles?

  • Is Nutella available in glass jars ?

  • Is Marmite available in squeezy bottles?

  • Butter and jams are NOT served in individual packs

  • Are individual portions of non-dairy spread (eg margarine) provided on request?
