Pre-opening Leader

STARTUP (FIRST THING)

  • Breakers on for hood vents, fry fryers, lights, and menu boards

  • Check DEFERRED ORDERS for any pick up or delivery orders?

  • Has the kitchen been notified of all large catering orders for today?

  • Are all the condiments, plates, napkins, ice, cups etc. ready?

Office

  • Open Outlook and see if there are any important emails to be addressed

  • Check answering machine for messages

  • Verify safe count versus INFORM

  • Prepare manual safe deposit for Loomis pickup (Friday's)

  • Order change from Loomis (Wednesday's)

  • Turn on Front Counter TV and Apple TV and start iPad Keynote app from black mini iPad

  • Take 6 clean drawers downstairs for the day

  • Take change drawer downstairs

  • Hand out blue towels for kitchen and front counter

POS

  • Are all registers, cc readers, cash drawers, KPS monitors in working?

  • Have we called IT to get a replacement?

Refrigeration

  • Opening refrigeration log complete

  • Do all refrigerator units appear to be functioning properly?

  • Refrigerator has been pulled out and NO bags or debris are restricting air flow in the back or on the bottom of the intake air vent.

  • The refrigerator is plugged in and receiving power.

  • Which refrigerator is not functioning?

  • The Kitchen Manager or General Manager has been notified, or the appropriate technician has been called.

Misc.

  • Confirm opening kitchen checklist is complete

  • Confirm opening front counter checklist is complete

  • Opening gameplan w/ set up sheet

  • Team Member assigned to stocking

  • Team Member assigned to Second Mile

  • Team Member assigned to filters

  • Team Member assigned to kitchen weekly duty
