BACON BITS

  • Using clean gloved hands, clumps of Bacon Bits are broken up into smaller pieces when portioned into the Omelet Blend.

  • Opened bags of Bacon Bits are sealed with plastic wrap, marked with a 10-day discard date and placed under refrigeration.

DICED HAM (NEW PROCEDURE)

  • A package of ham is divided into 3 stacks, the stacks weigh between 7.5 - 8 oz.

  • Stack of ham are placed onto a tray and cut with a metal dough scraper. Cuts are 5 x 5 cuts.

  • After cutting ham, the ham is fluffed to separate pieces.

  • Prepped diced ham 48-hours or added directly into the Omelet Blend.

LOADED OMELET BLEND

  • Sausage crumbles are prepared following the current OPM page 1001. Sausage crumbles must be 41F prior to mixing with other ingredients.

  • Omelet Blend has sausage crumbles, shredded cheese, bacon crumbles, and diced ham. The blend is prepared following the recipe provided in the new product guide.

  • Loaded Omelet Blend is held in a 1/3 size, 6" deep pan with a solid lid. Pan has a 48- hour hold time.

  • Loaded Omelet Blend is stored near the grill station in a Chill-It pan or amber pan in a properly prepared ice bath.

  • A #20 Food Disher is used to portion the Loaded Omelet Blend.

  • When cooking Loaded Omelets, ensure ingredients are lightly patted down into the egg, egg is folded and patted down again.

ASSEMBLY & PACKAGING

  • Loaded Omelet Biscuits preparation and packaging is demonstrated to standard. When observing employee behaviors while preparing the new product, proper procedures are being followed.

GUEST SERVICE & EXECUTION

  • Current Schedules and deployment are reviewed to anticipate the potential increase in ADQs during the breakfast daypart.

  • Cashiers are properly trained and have tasted the Loaded Omelet Biscuit so that they can describe the biscuit to the guest.

  • Needed biscuits and loaded omelet blend are prepared based on anticipated ADQs.

SUPPORT MATERIAL

  • Job-Aids are posted on the cook's line.

  • Nutritional information has been been placed near the Frontline area for the employees to reference.

  • Person in Charge knows the Loaded Omelet Biscuit sales projections (ADQs).

  • Person in Charge is demonstrating MODEL-COACH-REQUIRE as needed to enforce proper standards and procedures to deliver a HOT, HIGH QUALITY product to Every Guest, Every Time!
