Back of House

  • Does Back door have a gap where light is shining through?

  • Walls have no holes. If pipes going through like ice machine lines must be sealed

  • Tile - Including cove bases. Not cracked or missing. No lo grout lines.

  • Ceiling Tile - No missing , damaged, cracked, or pieces falling of or that could fall off in food.

  • Shelving - bottom shelf is 6 inches off the ground.

  • Floor Drain - at least a 1 inch air gap . Has a dome and basket in drain.

Walk in Refrigerators or Freezers

  • Door to walk ins is self closing. Latch to close works properly. Handle to walk in door is working properly and not missing pin to open door?

  • Gaskets on Door not torn or falling off. If dirty take picture for follow up with store.

  • Walk in shelving not slanting or broken. Bottom shelf should be min 6 inches off of the ground.

  • Fans - working and clean. IF condensation or dripping take fix to open work order for PM

  • Floor/Coving - Not cracked, missing or low grout. Any water/ ice accumilation take a picture to open work order for PM

  • Walls- no holes or damaged walls

  • Light- all lights are covered, cover not cracked or missing. If light out take pic to open work order for light out

Prep Sink Area

  • Mop Sink - Back flow device in mop sink. If mop sink has no back flow device hose cannot be touching ground.

  • Mop sink has a way to hang mops, brooms dustpans. The holder working properly

  • Dishwashing sink detergent and sanitizer dispenser working properly and has back flow device.

  • Dishwasher looks clean inside?

  • Prep station set up ?

  • Dish racks not falling off/leaning and in good condition?

  • Ceiling Tile - No missing , damaged, cracked, or pieces falling of or that could fall off in food.

  • Light- all lights are covered, cover not cracked or missing. If light out take pic to open work order for light out

  • Batch Toaster - handles not broken or missing. Filters not broken or missing.

  • Round up/Sourdough Toaster - nobs not missing and working properly

  • PHU/UHC -buttons on units working properly not missing or falling off

  • Wheels - On grill, POUS, and center island working properly

  • POU - Gaskets not torn or falling off. If has a light it is covered and not burnt out. Fan is clean.

  • Microwave cover not missing or cracked. If dirty take a picture for follow up with store.

  • Island table - Should be 6 inches off the ground. Not leaning, missing pieces. wheels working properly
