Opening Front Counter

First items

  • Tea for sweet and unsweetened brewed

Lemonade machine

  • Plug in

  • Assemble machine

  • Make one batch of each regular and diet to fill machine

  • Turn on master switch

  • Turn on individual bubblers

Ice Dream machine

  • Assemble machine

  • Prepare sanitizer water to 200 PPM

  • Mix 1 pack of K5 Sanitizer (located at managers workstation) and 9 quarts of warm water and pour into ice dream machine

  • Turn on master switch

  • Start wash cycle

  • Sanitize for 5 minutes

  • Empty sanitizer water out

  • Fill hopper with one full new bag of ice dream mix

  • Pour any previous day ice dream into hopper

  • Start Auto cycle

  • Drain a couple ounces of ice dream from dispenser to push any remaining sanitizer

  • Prime machine (pull up on primer bar for 5 seconds to eliminate any air from barrel)

  • Discard sanitizer water and waste ice dream from priming

  • Set out chocolate

  • Place strawberry topping in dispensing gun

Lemon/cherry caddie

  • Place ice in base

  • Turn on and set up breading table

  • Turn on open fryers. Check oil levels in machine

  • After checking oil levels, turn on Henry Penny pressure fryers

  • Turn on Backyard Grill Machine and spray grates with release agent

  • Recycle oil per LEAN oil based on process(filet machine on Tuesday's, nugget machine on Friday's

  • Turn on chutes, setting #4; turn on all lights

  • Turn Duke system on and set to lunch setting

  • Turn on bun toaster; ensure settings are heat(7), crown(2.5), heel(2.0)

  • Turn on heat lamps

  • Turn on warming drawer, setting (#8) for a temp of 180*F

  • Fill butter roller with bun oil

  • Fill pickle container

  • Confirm all utensils are here

  • Ensure KICS are ready to use

  • Ensure all paper items are stocked: fry containers, sandwich bags, clamshells

9:20a.m. To 9:30 a.m.

  • Cook appropriate quantities of items based on LEAN chicken app

9:30 a.m. to 10:30 a.m.

  • Maintain fresh food within holding times (TIMERS MUST BE SET WHEN CHICKEN IS COOKED)

  • Maintain breading table throughout shift

  • Ensure lettuce and tomatoes are prepped for sandwiches (Slice 1 full pan of tomatoes)

  • Ensure appropriate quantities of lunch items are prepared

  • Prepare soup for lunch (by 10:30 a.m.) when in season

  • Clean filters for ALL fryers as well as cleaning up MOPSINK!

11:30a.m. to 11:45 a.m.

  • Ensure ALL Henny Penny's are quick cleaned for lunch (including fry machines)

By 4:00 p.m

  • Cut and squeeze lemoms

  • Empty ALL trash and cardboard

  • Verify ALL chicken has been pulled

Salad Prep Table

  • Oven turned off

  • Prep one pan of sliced tomatoes for next day

  • Place all product into clean containers with date labels and place in bottom refrigerator

  • Place any sealed bags of soup in ice bath and place in walk-in

  • Ensure enough lettuce and chicken is prepared for next day

  • Turn off rail to breaking table

  • Discard milk wash and coater from top rail
