Vent hoods

  • Are all vent filters taken Down, soaked, cleaned, and replaced? This includes: breading hoods, board hoods, and breakfast hoods

  • Are all areas above and around vent hoods cleaned properly and free of dust, dirt, stains, or debris?

  • Are all areas above hoods polished with stainless steel polish until shiny?

Walls

  • Are all walls properly cleaned and free of dirt, stain, and debris? This includes: thawing cabinet walls, boards area, prep area, and all other visible walls.

Stock

  • Is all stock In refrigerators properly stocked and rotated? This includes walk In fridge

  • Are freezer items in proper place and rotated? This includes walk in freezer

  • Is all dry stock in proper place and rotated correctly?

Breading table

  • Shelves in breading table removed, washed, sanitized

  • Inside bottom refrigeration is cleaned and scrubbed

  • Doors and gaskets are cleaned of debris

  • Filter is clean
