Mangers Checklist

  • Turn off 'Now Cooking' sign

  • Switch on magnetic lock and lock both doors

  • Once ALL doors are locked set safe time delay

Makeline

  • All food products put into cool room

  • Clean sauce shelves and under sauce bench

  • Clean glass panels behind makeline and sauce bench

  • Walls near keyboard, behind makeline, bin area

  • Sink clean and all cloths removed

  • Oven trays and ends wiped

  • Under sauce bench wiped (no pools of water)

  • Sides fridge cleaned (Including seals)

  • Flour shakers emptied, squeeze bottles washed down, shakers cleaned

  • Pit trays, chip trays, cheesy breads all clean and put back in place

  • Dough trolleys in piles

  • cool room flaps washed

  • Coolroom door clean

  • Swept under shelves

  • Floors mopped

Front Counter

  • Top of counter sprayed down

  • In and around computers wiped for crumbs

  • Bottom cupboards on counter wiped

  • Wipe down wall to the left of the sink (dirt and grime) & rinse all cloths and hang to dry overnight

Customer Area

  • Vacuum & mop floor

  • Wipe down tables and chairs and clean bin area inside and out

Floors

  • Wet floors with hose & chemical provided

  • Scrub with doodle bug, ensure under fridges, benches are cleaned

  • Vacuum water with wet vac

General Duties

  • Coke fridges full and cleaned

  • Hotbox shelves wiped down

  • Hotcells cleaned & organised neatly

  • Make driver floats

Managers Final Close List

  • Cool room door closed and light off off

  • Makeline turned off

  • Breads away

  • Till and Safe locked (keys away)

  • All ovens turned off

  • Air con turned off

  • Check all floors are clean

  • Tv's & Music off

  • Magnetic switch turned on

  • Turn lights off, set alarm & lock doors
