Items to be done each Week

Please do not start weekly cleaning tasks that cannot be finished during the busy periods in the mornings from approx 6am to 11am

  • Select day of week

  • Stocktake Thompsons Pies and place order

  • Remove tray from Bug Zapper and empty contents into bin.

  • Remove in sections the products inside Glass 4 door fridge and clean by using spray and wipe to clean the inside of the fridge including floors walls,door internals and ceiling.

  • Glass 4 Door Fridge-Clean Condenser Filter out with Boiling Water, let dry before reinstalling

  • Roll 4 Door Glass fridge out from wall and clean and mop behind where the fridge is located, clean wall where required

  • Juggler fridge-Remove all milk cartons and any associated stock from fridge and clean extensively using warm water and red cleaning cloth and thoroughly clean the internals of fridge

  • Before attempting to roll out Juggler fridge, is it empty?

  • Once you have established the Juggler is empty, roll fridge out using two people, pay particular attention to the cords and plastic piping behind the fridge control unit on left hand side when pulling out and pushing back in, sweep behind fridge then mop, ensure walls and floor are clean before pushing fridge back in,use 2 people to roll back in.

  • Clean toilet bowl with toilet brush and domestos/bleach

  • Clean toilet system externally using spray and wipe

  • Check if toilet requires toilet tab, if so please lift toilet lid and place blue block inside cistern

  • Clean Laundry Sink with hot water and wipe clean

  • Clean hand basin area use spray and wipe

  • Collect Garbage bins from the road side and return to bin enclosure

  • Clean Food preparation room stainless benches externally

  • Remove all items off bottom shelf of food prep bench and wipe clean with spray and wipe

  • Clean dishwasher internally and externally using spray and wipe and red cloth

  • Make sure trap in bottom of dishwasher has been emptied and clean

  • Clean Air Cond Filter by removing and hosing out,ensure air cond is switched off while this is happening

  • Ensure the Air conditioner is switched OFF while the filter is removed

  • Mark the fridge with the date it was cleaned

  • Make sure an action is created to be done the next day

  • Check garden beds for excessive weeds or rubbish

  • Roll 2 door fridge out and clean wall and floor behind and underneath- the rollers need to be unlatched before attempting to roll out

  • 2 Door Fridge in Kitchen-Clean Condenser Filter on top of the Fridge in front of Compressor

  • Clean on top and behind of upright Freezer, roll out and clean underneath then return to original position

  • Clean Bae Marie externally and then clean underneath and behind- this task requires two people to lift and maneuver it around

  • When oven turned off and plate has cooled, use pointy nose pliers to clean grooves on the grill plate to remove excess build up of burnt oil.

  • Clean Mop sink internally and externally

  • Clean washing machine internally and externally by wiping with a red cloth, do not do Bowl Cean

  • Make an additional 12 x HC Croissants for weekend days so 18 HC in total

  • Make an additional 6 x HC Sandwiches for weekend days so 12 HC in total

  • Make an additional 2 x HCT Sandwiches for weekend days so 6 HCT in total

  • Make an additional 2 x HCTO Sandwiches for weekend days so 4 HCTO in total

  • Make an additional 2 x CCM Sandwiches for weekend days so 4 CCM in total

  • Collect Garbage bins from the road side and return to bin enclosure, ensure bin orientation is as shown on illustration on fence

  • Clean Condenser Filter with Warm Water, let dry before reinstalling

  • Make an additional 8 x HC Croissants for weekend days so 16 HC in total

  • Make an additional 6 x HC Sandwiches for weekend days so 12 HC in total

  • Make an additional 2 x HCT Sandwiches for weekend days so 6 HCT in total

Laundry Area

  • Make an additional 1 x HC Sandwiches for weekend days so 5 HC in total

Outside area

  • The garden beds need to be checked by walking around the boundary of the shop and take a photo of each garden bed , any rubbish found must be put in bin immediately

  • Check garden beds for excessive weeds or rubbish

  • Check all hand soap dispensers are full above each hand wash sink

Morning Shift

Tasks to be completed before start of your shift

  • Clock on to Deputy to start your shift-ensure you provide a comment if you were late for your shift<br>

  • Check your News feed in Deputy for any recent updates and make sure you have read and understood the post, then confirm and tickoff as required

  • Check for any Heads Up in I Auditor and Acknowledge as required

  • Phone must be set to Silent and Do Not Disturb, All Social Media notifications must be switched off on your phone-Facebook/Instagram/Snapchat and TikTok at a minimum

  • Check ISafety Auditor for any assigned ACTIONS and complete as required-Please mark ""in progress"" if you have started the Task

  • Fit name badge to your shirt (where the customer can see it)

  • Always carry a Black Texta on you at all times

  • Always wash and sanitize your hands before starting your shift

  • Always ensure the products served to the Customers is of a High Quality, never let speed of service to get in the way of the Quality of the product

  • Upon removing battery for headset, please move outside battery's to center slots for charging

  • Sign and date risk assessment , update if necessary.<br>

  • If not already completed by Till Operator,obtain Use By Register Sheet and check for anything on the list that will go out of date that day, this will enable the products to up sell to a customer, once completed this list must be given to the Till Operator and the bottom of Drive Thru Menu and the bottom area of Walk up Menu must be decorated with the specials for that day

To be completed during your morning shift

  • It is your responsibility to collect the dockets from slave printer and place in respective docket holder, they are located at drive thru pick up window bench top above juggler/bottom of walk up window/ and above sink where Iced drinks are made

  • The soft Avocado container can be filled with water to prevent the Avocados from further ripening

  • Check the soft avocados and hard avocado container and transfer as necessary to ensure the avos remain suitable enough they can be used.

  • Check the Bae Marie for soft tomatoes and ensure they are rotated to be used first

  • Check all Spray and Wipe bottles above each sink are top up so they are full every shift

  • Check the butter in the Gastronom tubs is soft enough to butter bread sufficiently, if not place on wooden shelves

  • When stocking Coffee Cupboard always make sure we restock from office with the Box of Beans with the oldest date FIRST!

  • Check the dates on the 2 Litre milk cartons in the front fridge to ensure the oldest cartons are being used first

  • Constantly monitor the milk that is the oldest is used first- advise the Barista throughout the morning shift what is to be used to ensure it does not go out of date

  • Make sure cutting board/food handling cutlery next to Sandwich press is kept clean at all times.

  • Check the internal floor of the 4 door glass fridge is free from water, crumbs or anything else foreign then clean with a red micro fibre cloth

Check front 4 door glass fridge is stocked with the following before the end of your shift

  • If tomorrow is a Public Holiday or the store is closed please do not remake these sandwiches

  • 3 x Ham, Cheese Tomato and Onion Toasted Sandwiches-Use By Date is 2 Days from the time it was produced

  • 2 x Roast Beef Toasted Sandwiches.-Use By Date is 2 Days from the time it was produced

  • 6 x Ham/Cheese Toasted Sandwiches-Use By Date is 2 Days from the time it was produced

  • 3x Ham/Cheese/Tomato Toasted Sandwiches-Use By Date is 2 Days from the time it was produced

Cleaning the Juggler

  • Remove all Bladder trays from Juggler and initiate cleaning routine as per the procedure on the front of the fridge, please follow these steps below

  • Always ensure any excess air is the bladder bags has been drained before loading in red tub

  • Always double check the white plug is removed before inserting into fridge

  • If the Carton Skim Milk is to be used before Bladder Skim milk, blank off the respective fridge by placing all Red blanks upwards to prevent the milk being used at the tap dispenser

  • Full Cream Bladders must always be fully loaded on all trays unless there is an excessive amount of Full Cream Carton Milk going out of date that day

  • Always load from the bottom used shelf up to ensure female valve on bladders is not pushed up while sliding tray into juggler fridge causing the male spicket inside fridge to be misaligned with Bladder bag

  • Always visually check the small silver tray does not have any excessive milk on it after loading up

  • Always slowly slide trays in, don't ever force as this indicates an misalignment issue

  • Last but not least always get a second person to check with you that the bladders are not leaking before you move onto the next job

  • Closing Barista to sign below to acknowledge they have checked with the Food Delivery Person to ensure there are no leaks

  • Constantly monitor carton milk in small fridge is stocked up for Barista, always check dates so the oldest cartons are used first

  • When restocking 1 Litre Carton milk, do not over stock fridge and ensure OPENED Lactose Free and Coconut Milk cartons are positioned so they are used first and clearly marked with an opened date

Kitchen Preparation

  • Check the freezer is stocked up with sufficient amount of stock by updating numbers of items on front of freezer

  • This needs to be completed by 1030am at the latest

  • Use red whiteboard marker for identifying levels on or below re-order points

  • Use green whiteboard marker for identifying levels above re-order points

  • Smoothie packs must be checked daily

  • Update the stock numbers as well as the date and time it was completed-this should be done 30 mins prior to the food delivery person finishes their shift

  • Each time a Gastronom container is emptied, please cycle out with a new container and place paper towel in the base

  • Ensure Kitchen Preparation Microwave is clean and free from any food debris, ensure it is cleaned using spray and wipe internally and externally, make sure power is switched off during the cleaning process

  • Always use the correct colour chopping board for each type of food to prevent cross-contamination- See the poster on the wall above sink

  • When packing Dishwasher, please do not place any sistema lids or food saver container in as the excessive heat causes the seals in lids to fall out during wash cycle

  • Check Fridge is kept clean and tidy at all times, fruit and vegetables should always be cut up and packaged in the Freezer wherever possible

  • Anytime a delivery is taken, please ensure the invoice or delivery docket is checked that all items delivered is consistent with the what has been ordered, if this is not the case please make sure you contact the supplier and have the items delivered or refunded?

  • Enter the items that are missing

  • Check the dates on items being checked into the store to ensure they have enough Use By date on the item

  • When stacking items in the freezer, ensure the products are not being squashed or deformed thus preventing the item being sold, stack the items in freezer at least two hours apart so the items on the bottom aren't being squashed

  • Always ensure cold meat bags have been Crivac whenever stored in the fridge

  • All items of perishable Food must be dated with the sticker for that day, the AM or PM marking must be stated on every item

  • Check tomatoes for ripeness and place the oldest ones on meat slicer to be used first

  • When repacking freezer with new supplies always ensure food items are rotated so that the older ones are used first

  • When placing your headset back in office, always remove battery and place on charger ready for the next day

Receiving Goods into the Shop

  • Did you take delivery of any goods coming into the shop today?

  • Which one of the following was it?

  • Make sure the items were counted/ticked off/signed and stamped entered BEFORE delivery person leaves. if no delivery docket please take photo of the goods

  • Scan into Dropbox Folder under Delivery Dockets

  • Make sure the items were counted/ticked off/signed and stamped ENTERED before delivery person leaves

  • Scan in to Dropbox Folder under Tax Invoices, ensure the name and invoice number/dollar amount are clearly labelled on heading

  • Check list in office on wall for what requires manual payment and if applicable create an action and send to Piva for Payment, make sure photo of invoice is attached

  • Make sure the items were counted/ticked off/signed and stamped ENTERED

  • Scan in to Dropbox Folder under receipts, ensure the name and invoice number/dollar amount are clearly labelled on heading

People making enquiries that were not customers

  • Was there anyone making enquiries or requesting the manager/owner that came to the shop today?

  • Please make sure you take their name and phone number at an absolute minimum and also identify urgency or importance of their request based on who they are, Sales Representative/Police/Council Official etc

  • Record their details and send an action to Piva explaining who they were and what they wanted

Morning Person Food Preparation and Delivery Signature

  • Did you start early or work back today?

  • Please comment in the comments section of your time sheet explaining why

  • Ensure this audit is marked as complete by making sure all mandatory items are done

  • I have created an action items for any of the above tasks and assigned to applicable person for completion

    High- Needs fixing straight away- Affects the business being able to run properly

  • Please ask the repair company to attend site and repair issue
