Bar setup

  • Reassemble & turn on glass wash/check chemicals & salt, refill if need to.

  • Set up stations - jiggers, mats, fruit, speed pouters, measures

  • Fill lime & blackcurrant cordials & stock juices

  • Polishing cloths ready on bar & blue roll

  • Check if any other stock needs to be re-filled

  • Stock up coffee machine - cups, saucers, sugars, tea spoons, coffee, tea, decaf

  • Refill and get ready all sanitisers & any other cleaning products needed

  • Polish all bottles & shelves on display

Floor setup

  • Check all tables are wiped - get all wax off

  • Check reservations & call to confirm - then put out reserve signs

  • Clean menus out on tables once checked with chef

  • Set up cloth & sprays ready for service

  • Check printer paper on all tills

  • Cutlery fully polished and ready, spare napkins stocked

  • Set up tables in dining room - napkins, cutlery, water glasses, s&p's, sauces

  • Business cards, tip trays, wet wipes and deliveroo bags ready

  • Check milk & cream stocked in small fridge

  • Fill all condiments and have spare ready, all ramekins ready for service

  • Check light bulbs are all working

  • Wipe special board and put new specials on

Toilets

  • Check toilet paper & soap fully stocked and toilets are clean

  • Check posters are relevant and in good condition

  • Wipe any dust of extractor fans

Outside

  • Put all tables in place, wipe down with hot soapy water and put ashtrays out

  • Check rubbish area clean and everything is in the bin

  • Sweep pavement and surrounding area - check for fag ends, rubbish etc

  • Wipe down ledges on pub with hot soapy water

  • Check menu in the box is correct

  • Is everything completed and manager is aware of anything outstanding?
