SUNDAY DEFROST BAR FREEZER - LAST SUNDAY OF EVERY MONTH

DEFROST FREEZER AT THE END OF SHIFT ON THE LAST SUNDAY OF EVERY MONTH (this is also included in the closing checklist to ensure it is completed on the Sunday night and ready to be cleaned on Monday morning) At the end of shift, remove all items from the freezer and take upstairs to the kitchen freezer (located next to the staff toilet). DO NOT PUT GLASS IN THE UPSTAIRS KITCHEN FREEZER - please put the Nick & Noras that are stored on the top shelf for martini’s back into the bar fridges located on both sides of the bar ready to use again in service. Group all bar items together neatly so it’s easy for the next person to grab everything when turning the freezer back on. Turn freezer off at the wall (pull freezer out of its space and unplug from the socket behind the freezer) DO NOT TOUCH THE CONTROL PANEL - by directly switching it off at the wall instead of with the control panel, when it is turned back on it will automatically turn back on with the correct setting loaded. Leave door slightly open so the melted ice can drain out. Place a few tea-towels underneath the door on the floor to soak up the dripping water while freezer is defrosting. Leave overnight like this for the Monday Cleaner.

MONDAY MORNING

Wipe out and dry freezer with a tea-towel/white bar cloth. Plug freezer back in to the wall and push freezer back into its spot between the service well and the sink. By plugging the freezer back in, the control panel on the front right hand side should turn back on and light up with red writing/numbers. DO NOT TOUCH THE CONTROL PANEL. As mentioned in the previous instruction, the control panel will automatically turn back on to its correct pre-loaded setting if the freezer is turned off and on again directly at the plug socket. Get all items for the bar freezer from the kitchen freezer upstairs (kitchen freezer located next to the staff toilet upstairs - all bar items will be neatly grouped together by the previous member of staff who turned the freezer off) and place everything back into the bar freezer neatly. Please also place x6 Nick & Nora glasses on the top shelf ready for martini’s (Nick & Noras will be found in the bar fridges beside the freezer where they are usually kept throughout service, not in the kitchen freezer along with the rest of the items)

ICE MACHINE - MUST COMPLETE EVERY MONDAY

Please remove the air ventilation sheet from the front of the ice machine by sliding it to the left using the handle. Using a white bar cloth or blue chux cloth with water, clean the removed ventilation sheet and ensure any dust that has collected on it is removed. If you need to use a blue chux cloth and water for this, please ensure the vent is fully dried before sliding back into place. Please also brush away the dust that has collected between the slits in the vent attached to the actual ice machine using the same method

SERVICE AREA

CLEANING UNDERNEATH SERVICE WELLS - use the soap dispensers that are attached to the wall located in the kitchen cleaning corner which is found next to the fire escape back door (photo will be attached below). A detergent and water pre mixed solution will come from the left hand side dispenser which is attached to a black hose. Please use the left hand side dispenser as this detergent is most effective for cleaning the floors, NOT the right hand side dispenser that has a dial on the front (photo will also be attached). For underneath the wells, please fill the blue mop bucket with the soap solution that comes out of the hose by holding down the grey button on the front of the dispenser. Take this into the bar along with a mop and broom (mop will be located next to the bucket and brooms are hanging on the rail on the wall next to the soap dispenses - see photo attached). Please remove everything from underneath the service wells and tuck the black curtains into speed rails to keep them out the way. Use the mop/broom and soap solution in mop bucket to clean and scrub the floor and walls underneath the wells and sink, starting from the end of the right hand side bar fridge all the way around the start of the left hand side bar fridge. If there is dirt/alcohol build up around the pipes or on an area you cannot access with the mop or broom, please use a blue chux and scrub by hand. Please also use the chux and soap water solution to wipe down the metal legs under the wells (see photos attached of areas that need cleaning). Once clean, allow under the wells to dry before putting the curtains back into place

Clean and dry bar fridge windows - use hot soapy water with a chux to wipe down bar fridge windows and vents (see photo attached of vents and bar windows on both sides). Also wipe down the fridge windows located behind each bin (see photo attached). Soap is located in the dish pit area in a squeezy bottle (see photo attached of bottle for reference). A spare roll of chux should be under the coffee machine behind the sliding doors. If not, a new roll can be found in the Cage in B1 with all the cleaning supplies on the shelves. Dry with a white bar towel, including air vent seals (towels can be found in the milk crate underneath the coffee machine sink or spares will be located in the same area of the B1 cage).

Remove all items from the bottom shelves in the fridges, wipe inside fridge shelves and seals and place items back neatly, grouped together correctly and with labels facing forward (wine fridges and bar fridges - see photos attached) Use pink ‘germguard’ spray and chux cloth to get rid of any sticky and dirty areas, especially any build up on the fridge ledges and seals. Switch the white towels in the bar glass fridges for fresh ones (see photo attached)

Remove all bottles from the bar top, wipe down bar top and bottles and place back neatly with labels facing forward (spirit and wine) - using pink ‘germguard’ spray and chux (see photos of area/bottles that need cleaning)

Using the stainless-steel polish (located in the cleaning area near the kitchen and loading dock) clean ALL METAL SURFACES around glass wash area, coffee machine, service area, bar sinks and beer tap (including objects and surrounding areas and walls). Put a small amount onto a towel and rub in circular motions to remove any marks (see photos attatched of areas that need cleaning)

COFFEE MACHINE

Pull out coffee machine and grinder and clean behind and underneath (including walls behind tea jars and milk jugs) - using hot soapy water and drying with a towel (liquid soap is kept in the kitchen hand area)

Remove items and clean inside the cupboard underneath the water taps and underneath the sink area (including around C02 canister) and reorganise neatly - use pink ‘germguard’ spray and chux cloth. Also remove the baskets under the water taps in the cupboard, clean shelf and reorganise items neatly (see photos attached of areas that need to be cleaned)

Soak and clean teapots and mugs with ‘Bracton pink’ glass and cutlery cleaner to remove all tea and coffee stains (Bracton powder is located in the behind the sliding doors under the water taps, see photo attached) Use any big plastic tub located in the dish pit area and fill with warm water. Scoop in Bracton powder depending on how much water you have used (2 scoops per 30 Litres of warm water) and gently place all crockery into the solution to soak. Leave to soak for 10 minutes and then put all crockery through the dishwashing machine to remove any excess solution on them (ask dish hands for help if you are unsure on how to use the dishwasher). If the stains are though to remove, repeat this process again but any necessary crockery.

Remove all items and bottles and change the white linen underneath (linen is located in the bottom drawers of the waiters stations, see photos attached)

Place all bottles and items in baskets back onto shelf neatly in groups with all labels facing forward

How shelf should be organised
DISPLAY CABINET

Remove bottles from inside of display cabernet, one section at a time (take a photo of where the bottles were so they can be placed in the same spot when being put back)

Wipe shelf from dust/stickiness with ‘germguard’ spray and chux
-
Wipe down each bottle with same spray and method and place back into cabernet in correct place and order (all labels facing forward - look from front of cabernet to ensure everything is placed in line and neatly)

Using ‘windowkleen’ glass cleaner spray and a dry cloth, clean outside glass of display cabernet (leaving no streaks or fingermarks)
-
Restock any bottles missing from display cabernet and neatly organise all bottles for show (any replacement spirit bottles will be upstairs in the office cabernets) - any missing bottles that are not found in the office should be noted down and passed onto Holly so they can be ordered for the following week
PDR AREA/BAR TAP

Clean Estrella tap area with hot soapy water (including surrounding pdr bench and til area) - using liquid soap from kitchen hand area with warm water and a towel to dry

Clean sliding doors and door rails with ‘germguard’ spray and chux
-
Dust with cloth/towel underneath beer tap area (being very careful when dusting around the keg lines)
