    2. Choose the appropriate schedule per day (Morning Checking / Afternoon Checking), then fill up the details required below in the space provided.

    Important Note:

    For cold-holding units, walk in and close the door. Read the mounted temperature gauge and record the temperature. Using a clean digital thermometer, take 3 temperature readings: at the back, middle and front of the unit. Record the temperatures. Coolers and fridges should be ≤ 4°C and freezers should be ≤ -18°C. Sign your name.

    This should be done twice a day; one in the AM and one in the PM period. If the temperature difference is ≥ 1°C, wait an hour and take the temperature again in case the unit is in the defrost cycle. If the temperature difference continues to be ≥ 1°C, report to the Production Manager immediately. Temperature control settings should be adjusted. If necessary, contact a technician. Record under “Corrective Actions” the date, issue/corrective action, and re-inspection time and temperature. Production Supervisor should verify daily and sign.
