External Areas

  • Is table ATD good? Each table with full salt/pepper, full and clean sugar pot, all tables match and all QR codes facing the door

  • Waiter stations are stocked with napkins, sauces and menus and there is enough for service

  • Are the stairs, ledges and general areas clean?

  • Is there a Canine area with dog bowls, dog treats and the canine code?

  • Is the book shelf neat, clean, tidy and well stocked?

  • Are there any light bulb out? (Good is Zero bulbs out, Fair is 1 or 2 bulbs out and Poor is more than 2 out)

  • Hash wash stations are setup with soap available and blue roll

  • Is the back bar cluttered? - Not sold, not seen (Paperwork, laptops, pens, personal items)

  • Is the bar clean? Check inside bin cubbyholes!

  • Is the bar "office" cabinet door shut when not in use?

  • Dishwasher has cleaning chemicals stocked

  • Is the FOH diary completed?

  • Fruit and Juices are fully labelled and in date

  • Is the bar milk chiller as full as possible with milk products for coffee?

  • Do all coffee syrups have a pump?

  • Is there enough coffee equipment for a busy Saturday brunch? (Cups/Mugs/Teapots/Saucers/Flat white glasses and saucers/Teaspoons)

  • Coffee station is adequately stocked and clean, ready to go for peak service - no "threats"

  • Bar is prepared for busy service, fruits prepped, juices and syrups are topped up, ice is available, oranges available

  • Cake display is on the front bar and looking attractive

  • The current atmospherics are reflective of the time of day (candles/lights/music/volume)

  • There is no excess dirty/uncleared tables - If so, team are actively clearing tables

  • Social media has been completed today

Toilets

  • Toilets are clean, especially baseboards and the wall under hand dryers

  • Toilet brushes are clean and not rusty

  • Is there toilet roll available in every cubicle?

Kitchen

Compliance

  • There is no slips, trips and fall hazards present

  • Fire exits are unlocked but kept closed when not in use

  • Gas bottles are chained up or laid flat, both in the cellar and outside areas

  • Is the Ice Machine clean and have a signed cleaning schedule? (No evidence of build up)

  • Are fire checks completed? Weekly & Monthly.

  • Have Risk Assessments been signed and in date?

  • Team are confident in allergen process - Quiz the shift managers and check for confidence

Cash Control

House Keeping

  • Is the boiler room empty?

  • Cellar is neat, clean and tidy - empty kegs have been removed and stacked outside

  • Back areas (side alley and outside the bottle room) is neat, clean and tidy, no excess trash or litter

  • Pablo Only: Pass room is neat, clean and tidy - dirty plates are stacked and cutlery/mugs/cups in a bus tray. There is no excess and is being regularly sent to the kitchen

  • Bottle room is LOCKED and tidy where possible

  • Cleaning cupboard is LOCKED

  • Office is well organised and tidy - No excess clutter
