Bar Daily Closing Duties

  • Clean the pour mats and draught trays using the sprayer in the dishwashing area and run through dishwasher

  • Pour cleaner down the draught tray drains

  • Clean the speed rails and wipe down the bottles. Plastic wrap all bottles

  • Wrap all pour spouts in plastic cling wrap

  • Empty ice wells of ice and wipe dry

  • Wipe down all back bar counter surfaces

  • Wipe down wine and schnapps fridge doors

  • Clean POS screens, printers, and cash drawers (warm water only)

  • Empty all slop buckets and bus bins

  • Disassemble all three of the glass washers. Turn the power off and ensure that the switch inside the machine is in the center/off position thoroughly clean the inside of all three machines. Remove the two screens located inside the machine. Remove the plug located inside the reservoir allowing it to drain. Pile all of the parts inside the machine.

  • Take all empty beer bottle cases to the back area and stock neatly

  • Take away ice buckets and water jugs from north bar server station and coffee server station

  • Ensure that the labels on all bottled beer are facing outwards

  • Ensure that the labels on all glassware are facing outwards

  • Pour a large amount of diluted bleach down all of the floor drains

  • Empty all garbages

  • Sweep under ice wells and glass washers

  • Remove all dirty rags from bar

  • Remove all candle holders and bring to dishpit

  • Wipe bar top thoroughly with hot soapy water

  • Close espresso machine (leave on setting 2). Wipe down and wash parts in dishpit
