Dining Room Closing Checklist

  • Complete all comps and voids

  • All staff meals are rung in

  • TV's off 30 minutes prior to closing

  • Last Call 15 minutes prior to closing

  • Music turned off at close

  • Server side work is complete

  • Bar side work is complete

  • Count server/bartender cash drops and cash drawers

  • Fill out cash logs

  • Complete Walkthrough of dining room and bar area to ensure all required tasks are complete

  • Check restrooms

  • Dining room is closed, ropes up or doors locked to public

Take Out and Counter Area

  • Complete all comps and voids

  • Ensure BOH meals are rung in

  • 15 minutes prior to close, no more for here orders

  • 15 minutes prior to close turn off music

  • Closing time - no more orders

  • Lights up

  • All guests to exit building within 5 minutes of closing

  • Check condiment station - wiped down, fully stocked, pumps changed and trash emptied

  • Check beverage station - coke machine broken down, nozzles removed and soaked overnight, machine wiped down

  • Check employee locker room - clean, linens in bag, organized

  • Check trash room - floor clean and free of puddles and debris, supplies organized, all trash taken to dumpster

  • Dumpster area and any cages are maintained and secure

Closing office duties

  • Check Cashier's drop and cash drawer

  • Fill out cash drawer log

  • Count safe, log accordingly

  • Touch base with KM regarding any special needs for next day

  • Send nightly email, update communication log
