Closing Checklist

Makeline and Oven

  • Makeline turned off

  • Cheese water drained from both makelines

  • Put all food underneath Makeline into the Walk-In

  • All food products put into walk-in

  • Clean top and bottom of makeline

  • Clean glass panels behind makeline

  • Wipe down walls near keyboard, behind makeline, bin area

  • Oven wiped down

  • Pit trays and catch trays all clean and put back in place

  • Empty Dough trolleys in piles

  • walk-in clean

  • Swept under shelves

  • Break down Cut table

Front Counter

  • Top of counter sprayed and wiped down

  • In and around computers wiped for crumbs

  • Bottom cupboards on counter wiped

  • Computer screens, keyboards & phones cleaned

Dough Area

  • All tables wiped down

  • Screens Organized on rack

  • Wipe down wall to the left of the sink (dirt and grime)

Customer Area

  • Wipe down tables and chairs and clean bin area inside and out

  • Clean bathrooms

Floors

  • Sweep

  • Mop

General Duties

  • Coke fridges full and cleaned

  • Hotbags shelves wiped down

  • Hot bags cleaned & organised neatly

  • Lock Front door and Drive thru window

  • Set safe time delay (10mins)

  • Take out trash and replace all the bags

  • All ovens turned off

  • Turn off Open sign

  • Check dates

  • Print out dates/labels for the next day

  • Start washer

Dishes

  • All items on dry rack put away

  • Wash all Dishes

  • Pull out dishes for the cut table

  • Clean out sink and make sure no rags or food are left inside

Managers Final Close List

  • Pay out all drivers

  • Inventory

  • Run EOD (ADT, Load and PCYA for the day)

  • Check all floors are clean

  • Till and Safe locked (keys away)

  • Turn lights off & lock doors
