  • Were you informed of the two styles of dining in the florist? Did the server explain the menu sections?

  • When being informed of sharing style, were you recommended to choose three or four dishes?

  • Where you informed when ordering sharing style that your food would arrive in the form of waves?

  • Were you informed of any 86s or 85s before ordering (if appropriate)?

  • Were you verbally offered drinks?

  • Was your drink order taken at an appropriate time?

  • Was your drink order taken on an iPad/ written down on a notepad?

  • Was your drink order repeated back to you in full?

  • Was the trainee able to demonstrate good knowledge of the drinks menu and offer appropriate recommendations?

  • If no water or wine was offered were glasses removed from the table?

  • Were you verbally offered nibbles and/or starters?

  • Were your drinks delivered within 3 minutes of ordering (5 min if big ticket or cocktails)? <br>If ticket time was not met but table was touched by MOD select 'YES'.

  • If you ordered wine, was the correct wine serve procedure followed?

  • If you asked an allergen question was the correct allergen procedure followed in full?

  • Were you recommended any appropriate accompaniments with your main meal ?

  • Sharing Style

  • Did you receive a nibble plate and chopsticks within two minutes of the order being taken?

  • If sharing were your dishes placed in the center of the table and were you informed of the relevant details of each dish?

  • Were all dishes made and presented correctly according to spec?

  • Did you receive a check-back on your starter within an appropriate time frame?

  • Where you empty dishes cleared as soon as they were finished with?

  • Did the server endeavor to ensure that your table remained as clean as possible throughout your meal?

  • If ordering starters did you receive chopsticks and a nibble plate if sharing?

  • Did your starter arrive within 10 minutes of being ordered? If ticket time was not met but table was touched by the MOD select 'YES'

  • Where you informed of the relevant details of each dish?

  • Were you given a dessert menu after your main course had been cleared?

  • Were you offered tea or coffee?

  • Did you receive appropriate pre-lay for your dessert?

  • Was your dessert served within 8 minutes of ordering? If ticket time was not met but table was touched by the MOD select 'YES'.

  • Was your dessert made and presented correctly according to spec?

  • Were your desserts cleared within 3 minutes of finishing?

  • Was your bill brought to you within two minutes of requesting it?

  • Were you thanked by the trainee and bid farewell?

THE SECTION

  • Did the trainee maintain control over their section throughout their test?

  • Did the trainee ask for help when appropriate?

  • Were 100s in their section cleared within 3 minutes (with or without help)?

  • Was their section kept clean and tidy overall?

  • Were tables in their section bussed and reset within an appropriate time frame (with or without help)?

  • Did the trainee interact with their guests in a friendly and genuine manner?

  • To your knowledge, did the trainee correctly follow service criteria on all tables?

GENERAL

  • Did the trainee showcase a positive and friendly personality?

  • Did the trainee move around the restaurant with an appropriate pace?

  • Did the trainee maintain a professional, enthusiastic and smiley demeanor throughout?

  • Did the trainee display good teamwork and interact well with other members of staff?

  • If you experienced a problem during the meal, did the trainee react in an appropriate manner?

  • Were you aware of the problem being brought to the MOD's attention?

  • COMMENTS - please be detailed. Feedback to both trainee and trainer once the test is complete.
